Ingredients
  

1 lb ground beef or ground turkey

1 medium onion, diced

2 cloves garlic, minced

2 cups diced potatoes (about 2 medium potatoes)

1 cup diced carrots (about 2 medium carrots)

1 can (14.5 oz) diced tomatoes

1 can (15 oz) pinto beans, drained and rinsed

1 can (15 oz) corn, drained

4 cups beef broth

2 tablespoons chili powder

1 teaspoon cumin

Salt and pepper to taste

1 tablespoon olive oil

Fresh cilantro or parsley for garnish (optional)

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until they are soft and fragrant (about 3-4 minutes).

    Add the ground beef (or turkey) to the pot, breaking it up with a wooden spoon. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.

      Stir in the diced potatoes and carrots, cooking for an additional 5 minutes.

        Pour in the diced tomatoes (with juice), pinto beans, corn, and beef broth. Stir to combine.

          Season with chili powder, cumin, salt, and pepper. Bring the mixture to a boil, then reduce heat to low and simmer uncovered for 25-30 minutes, or until the vegetables are tender and flavors are well melded.

            Taste and adjust seasoning as desired. For a thicker stew, let it simmer longer; for a thinner consistency, add more broth.

              Serve hot, garnishing with fresh cilantro or parsley if desired.
