4 boneless, skinless chicken breasts

1 cup fresh mozzarella cheese, diced

1 cup cherry tomatoes, halved

1/2 cup fresh basil leaves, chopped

2 cloves garlic, minced

1/4 cup balsamic vinegar

1 teaspoon olive oil

Salt and pepper to taste

1 teaspoon Italian seasoning

Toothpicks or kitchen twine for securing

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Filling: In a medium bowl, combine the diced mozzarella, halved cherry tomatoes, chopped basil, minced garlic, and balsamic vinegar. Stir until the ingredients are evenly mixed, and season with a pinch of salt and pepper. Set aside.

      Prepare the Chicken: Pat the chicken breasts dry with a paper towel. Using a sharp knife, create a pocket in each chicken breast by slicing horizontally, being careful not to cut all the way through.

        Stuff the Chicken: Generously fill each chicken pocket with the tomato-basil mixture. Use toothpicks or kitchen twine to secure the openings as needed, to prevent the filling from spilling out during cooking.

          Season the Chicken: Drizzle the outside of each stuffed chicken breast with olive oil, then season with salt, pepper, and Italian seasoning, rubbing it evenly over the chicken.

            Bake the Chicken: Place the stuffed chicken breasts on a baking dish and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

              Serve: Remove the chicken from the oven and let it rest for a few minutes. Carefully remove any toothpicks or twine, slice if desired, and serve with a side salad or your favorite vegetables.
