8 oz linguine pasta

1 lb large shrimp, peeled and deveined

3 tbsp olive oil, divided

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup baby spinach

1/2 cup heavy cream

1/4 cup grated Parmesan cheese

1 tsp red pepper flakes (adjust to taste)

Salt and pepper, to taste

Fresh basil leaves, for garnish

Lemon wedges, for serving

Cook the Pasta: In a large pot of boiling salted water, cook the linguine according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Sauté the Shrimp: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the shrimp and season with salt, pepper, and red pepper flakes. Cook for about 2-3 minutes on each side or until pink and opaque. Remove shrimp from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the remaining tablespoon of olive oil. Add minced garlic and sauté for about 30 seconds or until fragrant. Stir in the cherry tomatoes and cook for 3-4 minutes, until they start to soften.

        Add Spinach and Cream: Reduce the heat to medium-low. Add the baby spinach and cook until wilted, about 1 minute. Pour in the heavy cream and stir to combine. Allow to simmer for 2-3 minutes until slightly thickened.

          Combine Everything: Add the cooked linguine and sautéed shrimp to the skillet. Toss everything together, adding reserved pasta water a little at a time if needed for a creamier consistency. Stir in the grated Parmesan cheese and adjust seasoning with salt and pepper.

            Serve: Divide the linguine among bowls, garnish with fresh basil leaves, and serve with lemon wedges on the side.
