Egg Topped Hash Browns with Bacon Gravy

4 large russet potatoes, peeled and grated

1 small onion, finely chopped

2 tablespoons vegetable oil

For the Bacon Gravy:

6 slices of bacon, chopped

2 tablespoons all-purpose flour

2 cups milk

Salt and pepper to taste

1/2 teaspoon smoked paprika (optional)

For the Eggs:

4 large eggs

Salt and pepper to taste

Fresh chives or parsley for garnish (optional)

Instructions
 

Prepare the Hash Browns:

    - Place the grated potatoes in a clean kitchen towel and squeeze out as much excess moisture as possible. This step ensures that the hash browns get crispy.

      - In a large skillet, heat the vegetable oil over medium-high heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

        - Add the grated potatoes to the skillet, season with salt and pepper, and press them down into an even layer. Cook for about 5-7 minutes, or until the bottom is golden brown and crispy.

          - Flip the hash browns using a large spatula, and cook the other side for another 5-7 minutes until crispy. Once done, remove from heat and keep warm.

            Make the Bacon Gravy:

              - In the same skillet, reduce the heat to medium and add the chopped bacon. Cook until crispy, about 6-8 minutes. Remove the bacon with a slotted spoon and place it on a paper towel to drain.

                - In the bacon fat left in the skillet, whisk in the flour and cook for 1-2 minutes, stirring constantly to avoid burning.

                  - Gradually add the milk, whisking continuously to avoid lumps. Cook until the gravy thickens, about 4-5 minutes. Season with salt, pepper, and smoked paprika (if using).

                    - Stir the crisped bacon back into the gravy and keep warm on low heat.

                      Cook the Eggs:

                        - In a separate non-stick skillet, cook the eggs to your preference (fried sunny-side up, over-easy, or scrambled). Season with salt and pepper.
