1 pound ground beef

1 onion, chopped

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (15 oz) diced tomatoes with green chilies

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon oregano

1 cup cooked rice (white or brown)

2 cups shredded cheddar cheese

1 cup sour cream

1 cup tortilla chips, crushed

Fresh cilantro, for garnish

Slice of lime, for serving

Instructions
 

Prepare the Base: Preheat your oven to 375°F (190°C). In a large skillet over medium heat, cook the ground beef until browned. Add the chopped onion and minced garlic, cooking until the onion is translucent (about 5 minutes). Drain any excess grease.

    Mix the Filling: Stir in the black beans, corn, diced tomatoes (with juices), chili powder, cumin, and oregano. Simmer for about 10 minutes, allowing the flavors to meld together.

      Layer the Ingredients: In a greased 9x13 inch casserole dish, start layering the ingredients in the following order:

        - First Layer: Half of the beef mixture

          - Second Layer: Half of the cooked rice

            - Third Layer: Half of the sour cream spread evenly

              - Fourth Layer: Half of the shredded cheddar cheese

                - Fifth Layer: Half of the crushed tortilla chips

                  Repeat the Layers: Repeat the layers with the remaining beef mixture, rice, sour cream, cheese, and chips.

                    Bake the Casserole: Cover the dish with aluminum foil and bake for 25 minutes. After 25 minutes, remove the foil and bake for an additional 15 minutes or until the casserole is bubbly and the cheese is melted and golden.

                      Garnish and Serve: Once cooled for a few minutes, garnish with fresh cilantro and serve with lime wedges on the side.
