Ingredients

2 English muffins, split in half

4 large eggs

1/2 cup mozzarella cheese, shredded

1/4 cup cooked and crumbled breakfast sausage (or bacon)

1/4 cup diced bell peppers (red, green, or yellow)

1/4 cup sliced cherry tomatoes

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper to taste

Fresh basil or parsley for garnish (optional)

Olive oil or cooking spray

Instructions

Preheat your oven to 375°F (190°C).

Lightly grease a baking sheet with olive oil or cooking spray.

Place the English muffin halves, cut side up, on the prepared baking sheet.

In a small bowl, crack the eggs and beat them lightly. Season with garlic powder, onion powder, salt, and pepper.

Pour an equal amount of the beaten eggs onto each English muffin half, allowing them to fill the edges.

Sprinkle the crumbled sausage evenly over the egg-topped muffins, followed by the diced bell peppers and sliced cherry tomatoes.

Top each muffin half with shredded mozzarella cheese.

Bake in the preheated oven for 15-20 minutes, or until the eggs are set and the cheese is bubbly and golden.

Remove from the oven and let cool slightly. Garnish with fresh basil or parsley if desired.

Serve immediately and enjoy your delicious breakfast pizza!
