4 whole wheat English muffins, split in half

4 large eggs

1 cup shredded mozzarella cheese

1/2 cup cherry tomatoes, halved

1/4 cup cooked and crumbled breakfast sausage (optional)

1/4 cup fresh spinach, chopped

1/4 teaspoon garlic powder

1/4 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons olive oil

Fresh basil leaves for garnish (optional)

Red pepper flakes (optional, for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the English Muffins: Place the English muffin halves on a baking sheet, cut side up. Drizzle olive oil over the tops and sprinkle with a pinch of salt and black pepper.

      Toast the Muffins: Bake the English muffins in the preheated oven for about 5-7 minutes, or until they are slightly golden and toasted.

        Cook the Eggs: Meanwhile, in a skillet, scramble the eggs over medium heat. Add the garlic powder, salt, and black pepper, cooking until just set. For extra flavor, you can mix in the cooked sausage at this step.

          Assemble the Pizzas: Once the muffins are toasted, remove them from the oven. Divide the scrambled egg mixture evenly over each English muffin half. Top with shredded mozzarella cheese, halved cherry tomatoes, and chopped spinach.
