Ingredients
  

1 lb ground beef

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 packet taco seasoning (or homemade)

1 cup beef broth

1 bag ( tortilla chips (about 12 ounces)

2 cups shredded sharp cheddar cheese

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 jalapeño, sliced (optional)

1 cup pico de gallo or diced tomatoes with cilantro and lime

1/2 cup sour cream

1/4 cup chopped fresh cilantro

1 avocado, diced

Olives for garnish (optional)

Instructions
 

Prepare the Beef: In a large skillet over medium heat, heat the olive oil. Add the diced onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

    Cook the Ground Beef: Add the ground beef to the skillet, breaking it apart with a spatula. Cook until the meat is browned, about 5-7 minutes. Drain excess fat if necessary.

      Season the Beef: Add the taco seasoning and stir to combine. Pour in the beef broth and let it simmer on low heat for about 5 minutes, allowing the flavors to meld.

        Layer the Nachos: Preheat your oven to 350°F (175°C). On a large baking tray, layer half of the tortilla chips. Spoon half of the beef mixture over the chips, then sprinkle half the black beans and corn. Add half of the shredded cheese. Repeat the layering with the remaining chips, beef, black beans, corn, and finish with the remaining cheese on top.

          Bake the Nachos: Place the baking tray in the preheated oven and bake for 10-12 minutes or until the cheese is melted and bubbly.

            Garnish and Serve: Once done, remove the nachos from the oven. Top with sliced jalapeños (if using), pico de gallo, sour cream, diced avocado, and chopped cilantro. Garnish with olives if desired.
