Ingredients

1 cup rolled oats

1 cup almond flour (or any flour of choice)

1/2 cup maple syrup or honey

1 cup fresh or frozen raspberries

1/4 cup coconut oil, melted

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal later.

Prepare the Crust: In a large mixing bowl, combine the rolled oats, almond flour, and melted coconut oil. Pour in the maple syrup (or honey) and mix until the ingredients are well combined and form a crumbly dough.

Form the Base: Press about two-thirds of the mixture firmly into the bottom of the prepared baking dish to form an even layer. Make sure it's compact and reaches the edges. Set aside the remaining one-third of the mixture.

Add the Raspberries: Spread the fresh or frozen raspberries evenly over the crust, making sure to distribute them well for an even taste in every bite.

Top with Crumble: Sprinkle the remaining crumb mixture over the raspberries, covering them evenly to form a crumble topping.

Bake: Place the dish in the preheated oven and bake for 25-30 minutes or until the top is slightly golden and the raspberries are bubbly.

Cool and Slice: Once baked, remove the bars from the oven and allow them to cool in the pan for about 10 minutes. Then lift them out using the parchment paper overhang and transfer to a wire rack to cool completely before slicing into bars.
