Ingredients

16 oz elbow macaroni

4 cups broccoli florets (fresh or frozen)

4 cups sharp cheddar cheese, shredded

2 cups milk

1 cup heavy cream

1 cup chicken or vegetable broth

1/2 cup grated Parmesan cheese

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 cup breadcrumbs (optional, for topping)

Instructions

Prepare the Cheese Mixture: In a mixing bowl, combine the sharp cheddar cheese, Parmesan cheese, garlic powder, onion powder, smoked paprika, Dijon mustard, salt, and pepper. Set aside.

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook for 2-3 minutes less than the package instructions (the pasta will continue to cook in the crockpot). Drain and set aside.

Combine Ingredients in Crockpot: In a large crockpot, add the partially cooked macaroni, broccoli florets, milk, heavy cream, chicken or vegetable broth, and the cheese mixture.

Mix Thoroughly: Stir everything together until well combined. Make sure the pasta is submerged in the liquid for even cooking.

Cook on Low: Cover the crockpot and cook on low for 2-3 hours, stirring once halfway through if possible. The dish is done when the sauce is bubbly, and the pasta is tender.

Optional Topping: If you want to add a crispy topping, about 30 minutes before serving, sprinkle the breadcrumbs over the mac and cheese and cover again. This will allow them to become golden and crunchy.

Serve: Once done, give it a good stir and serve hot. Enjoy your cozy, creamy fall meal with a sprinkle of freshly ground pepper or some chopped herbs for garnish!
