Ingredients

2 boneless, skinless chicken thighs

2 packs of fresh ramen noodles

4 cups chicken broth

1 tablespoon sesame oil

2 tablespoons soy sauce

1 tablespoon sriracha (adjust for spice preference)

1 tablespoon gochujang (Korean chili paste)

1 teaspoon minced garlic (2 cloves)

1 teaspoon minced ginger

1 tablespoon vegetable oil

1 cup baby spinach

2 green onions, sliced

2 boiled eggs (optional)

1 tablespoon sesame seeds for garnish

For the Creamy Garlic Sauce:

1/2 cup heavy cream

2 tablespoons mayonnaise

3 cloves garlic, minced

1 tablespoon lemon juice

Salt and pepper to taste

Instructions

Marinate the Chicken: In a bowl, combine the chicken thighs, soy sauce, sriracha, gochujang, sesame oil, minced garlic, and minced ginger. Mix well and let it marinate for at least 30 minutes.

Cook the Chicken: In a skillet, heat vegetable oil over medium-high heat. Once hot, add the marinated chicken thighs and cook for 5-7 minutes on each side until golden brown and cooked through. Remove from heat and allow to rest for a few minutes before slicing into strips.

Prepare the Creamy Garlic Sauce: In a small bowl, whisk together heavy cream, mayonnaise, minced garlic, lemon juice, salt, and pepper until smooth. Adjust seasoning to taste and set aside.

Cook the Ramen noodles: In a large pot, bring the chicken broth to a boil. Add the ramen noodles and cook according to package instructions (usually about 3-5 minutes). Stir in the baby spinach for the last minute of cooking until wilted.

Combine and Serve: Once the noodles are done, divide them into bowls. Ladle the chicken broth and spinach over the noodles. Top each bowl with sliced chicken thighs, a generous drizzle of creamy garlic sauce, sliced green onions, sesame seeds, and optionally, halved boiled eggs.

Garnish and Enjoy: Serve hot, and if desired, add more sriracha for extra heat! Enjoy your fiery chicken ramen with a creamy twist!
