2 (6 oz) Filet Mignon steaks

1 tablespoon olive oil

Salt and freshly cracked black pepper, to taste

1 tablespoon unsalted butter

1 shallot, finely chopped

1/2 cup beef broth

1/2 cup heavy cream

2 tablespoons whole black peppercorns, crushed

1 tablespoon Dijon mustard

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Steaks: Allow the filet mignon steaks to come to room temperature for about 30 minutes. Season both sides generously with salt and freshly cracked black pepper.

    Sear the Steaks: In a large skillet, heat the olive oil over medium-high heat. Once hot, carefully place the steaks in the skillet. Sear for about 4-5 minutes on each side for medium-rare, or until your desired doneness is achieved. Remove the steaks from the skillet and cover loosely with aluminum foil to rest.

      Make the Peppercorn Sauce: In the same skillet, reduce the heat to medium and add the butter. Once melted, add the finely chopped shallot and sauté until translucent, about 2-3 minutes.

        Deglaze the Pan: Pour in the beef broth, scraping up any browned bits from the bottom of the skillet. Allow the broth to simmer for about 2-3 minutes until slightly reduced.

          Add Cream and Peppercorns: Stir in the heavy cream, crushed black peppercorns, and Dijon mustard. Bring to a gentle simmer and allow the sauce to thicken, about 4-5 minutes. Season with additional salt if needed.
