6 oz sliced ham (preferably smoked or honey-glazed)

6 oz Swiss cheese (or your favorite cheese)

1 egg (for egg wash)

1 tablespoon Dijon mustard

1 tablespoon fresh chives (finely chopped)

Salt and pepper to taste

Flour (for dusting)

Sesame seeds (optional, for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare the Puff Pastry: On a lightly floured surface, roll out the puff pastry sheet to smoothen it out. Cut the pastry into 6 equal triangles.

      Mix the Filling: In a small bowl, combine the Dijon mustard, fresh chives, a pinch of salt, and pepper. Mix well.

        Assemble the Croissants:

          - Spread a thin layer of the mustard mixture onto each triangle of pastry.

            - Place a slice of ham and a slice of cheese at the wider end of each pastry triangle.

              - Starting at the wide end, roll the triangle towards the pointed end, forming the croissant shape.

                - Ensure the filling is tucked inside as you roll. Place the croissant seam side down on the prepared baking sheet.
