Flavor-Packed Cashew Chicken

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup unsalted cashews

2 tablespoons vegetable oil

1 bell pepper (red or green), sliced

1 medium onion, sliced

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

½ teaspoon red pepper flakes (adjust to taste)

3 green onions, chopped (for garnish)

Cooked jasmine rice (for serving)

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken pieces with 1 tablespoon of soy sauce, 1 tablespoon of oyster sauce, and 1 tablespoon of rice vinegar. Mix well and let the chicken marinate for at least 15 minutes.

    Toast the Cashews: While the chicken is marinating, heat a dry skillet over medium heat. Add the cashews and toast them until golden brown and fragrant, stirring frequently (about 3-5 minutes). Once done, set them aside.

      Cook the Chicken: In the same skillet, add 2 tablespoons of vegetable oil. Heat over medium-high, then add the marinated chicken. Stir-fry until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

        Sauté the Veggies: In the same skillet, add the sliced onion, bell pepper, garlic, and ginger. Stir-fry for about 3-4 minutes until the veggies are tender but still crisp.

          Combine It All: Return the cooked chicken to the skillet. Add the hoisin sauce, remaining 1 tablespoon of soy sauce, sesame oil, and red pepper flakes. Stir well to coat all the ingredients. Let it cook for another 2-3 minutes until everything is heated through.

            Add the Cashews: Gently fold in the toasted cashews and allow them to warm up in the mixture for 1 minute.

              Serve: Remove from heat and garnish with chopped green onions. Serve over a bed of fluffy jasmine rice for a complete meal.
