1.5 pounds baby red potatoes, washed and halved

3 tablespoons olive oil

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 tablespoon fresh parsley, chopped

1 teaspoon lemon zest

1 teaspoon sea salt (adjust to taste)

½ teaspoon black pepper

½ teaspoon red pepper flakes (optional for a kick)

Prepare the Potatoes: In a large pot, add the halved baby red potatoes and cover them with cold water. Add a pinch of salt to the water and bring it to a boil over medium-high heat. Once boiling, reduce to simmer and cook for about 10-12 minutes, or until the potatoes are fork-tender but still firm.

    Preheat the Oven: While the potatoes are cooking, preheat your oven to 400°F (200°C).

      Make the Herb Infusion: In a small skillet over medium heat, combine the olive oil, minced garlic, chopped rosemary, thyme, and parsley. Stir continuously for about 2-3 minutes, allowing the garlic to infuse the oil without browning. Remove from heat and add in the lemon zest, sea salt, black pepper, and red pepper flakes (if using).
