Ingredients
  

2 cups broccoli florets

2 cups cauliflower florets

2 medium carrots, sliced

1 bell pepper, diced (any color)

1 medium zucchini, sliced

1 medium red onion, sliced

6 cloves garlic, minced

1/4 cup olive oil

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)

1 tablespoon fresh oregano, chopped (or 1 teaspoon dried oregano)

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)

Salt and pepper to taste

1 cup grated Parmesan cheese (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, combine the broccoli, cauliflower, carrots, bell pepper, zucchini, and red onion.

      In a small bowl, mix the minced garlic, olive oil, thyme, oregano, rosemary, salt, and pepper.

        Pour the garlic herb mixture over the vegetables and toss until all the veggies are well-coated.

          Spread the seasoned vegetables evenly in a baking dish. If you're using Parmesan cheese, sprinkle it over the top evenly.

            Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.

              After 20 minutes, remove the foil and bake for an additional 15-20 minutes, or until the veggies are tender and slightly golden brown.

                Remove from the oven and allow to cool for a few minutes. Garnish with fresh parsley before serving.
