8 lamb chops, preferably loin or rib chops

4 cloves garlic, minced

3 tablespoons fresh rosemary, chopped

3 tablespoons fresh oregano, chopped

1 teaspoon salt

1 teaspoon black pepper

1/2 teaspoon crushed red pepper flakes (optional for heat)

1/4 cup olive oil

Juice of 1 lemon

Zest of 1 lemon

1 cup Greek yogurt (for dipping sauce)

1 tablespoon fresh dill, chopped (for dipping sauce)

Salt and pepper to taste (for dipping sauce)

Instructions
 

Marinate the Lamb Chops: In a bowl, combine the minced garlic, chopped rosemary, oregano, salt, pepper, and red pepper flakes. Add the olive oil, lemon juice, and lemon zest to the mixture. Mix well to create a marinade.

    Coat the Chops: Place the lamb chops in a large ziplock bag or a shallow dish. Pour the marinade over the chops, ensuring they are well-coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

      Prepare the Dipping Sauce: In a separate bowl, mix the Greek yogurt, chopped dill, salt, and pepper. Adjust the seasoning to your preference. Cover and refrigerate until ready to serve.

        Grill the Lamb Chops: Preheat a grill or grill pan over medium-high heat. Remove the marinated lamb chops from the refrigerator and allow them to sit at room temperature for about 15 minutes before grilling.

          Cook the Chops: Place the lamb chops on the grill and cook for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached. Use a meat thermometer for accuracy (medium-rare is around 145°F/63°C).

            Rest the Chops: Once cooked, remove the lamb chops from the grill and let them rest for about 5 minutes to allow the juices to redistribute.
