Flavorful Grilled Chicken Shawarma

2 lbs boneless, skinless chicken thighs

1/4 cup olive oil

1/4 cup plain yogurt

2 tablespoons lemon juice

4 cloves garlic, minced

2 teaspoons ground cumin

2 teaspoons ground coriander

1 teaspoon ground paprika

1 teaspoon ground turmeric

1 teaspoon ground cinnamon

1 teaspoon cayenne pepper (adjust for spice preference)

1 teaspoon salt

1 teaspoon black pepper

Pita bread or wraps, for serving

Fresh vegetables (lettuce, tomatoes, cucumbers, red onion) for topping

Tzatziki sauce or garlic sauce for drizzling

Instructions
 

Marinate the Chicken: In a large bowl, combine olive oil, yogurt, lemon juice, minced garlic, cumin, coriander, paprika, turmeric, cinnamon, cayenne, salt, and black pepper. Mix until well blended.

    Add Chicken: Add the chicken thighs to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 1 hour, or preferably overnight for deeper flavor.

      Preheat the Grill: When ready to cook, preheat your grill to medium-high heat.

        Grill the Chicken: Remove the chicken from the marinade and place it on the grill. Cook for about 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is charred and cooked through. Remove from the grill and let rest for 5 minutes.

          Slice the Chicken: Once rested, slice the chicken thinly against the grain.

            Assemble the Shawarma: Serve the sliced chicken in pita bread or wraps, topped with fresh veggies like lettuce, tomatoes, cucumbers, and red onion. Drizzle with tzatziki or garlic sauce for added flavor.
