1 cup orzo pasta

1 cup cherry tomatoes, halved

1/2 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Instructions
 

Cook the Orzo: Bring a large pot of salted water to a boil. Add the orzo pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Vegetables: In a large mixing bowl, combine the cherry tomatoes, cucumber, red onion, Kalamata olives, and fresh parsley.

      Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper. Adjust seasoning as needed.

        Combine Everything: Add the cooked orzo to the bowl with the vegetables. Pour the dressing over the top and toss everything together gently to combine.

          Add the Feta: Lastly, fold in the crumbled feta cheese, being careful not to break it up too much.

            Chill and Serve: Refrigerate the salad for at least 30 minutes to let the flavors meld. Serve chilled or at room temperature.
