Ingredients

2 ripe bananas, mashed

1 cup creamy peanut butter (natural is best)

2 large eggs

1/3 cup honey or maple syrup

1 tsp vanilla extract

1/2 tsp baking soda

1/2 tsp baking powder

1/4 tsp salt

1/2 cup dark chocolate chips (optional)

1/4 cup chopped walnuts or pecans (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin pan with paper liners or lightly grease it.

Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas and peanut butter until smooth. Add the eggs, honey (or maple syrup), and vanilla extract. Mix until well combined.

Combine Dry Ingredients: In another bowl, whisk together the baking soda, baking powder, and salt.

Combine Both Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix! If using, fold in the chocolate chips and nuts at this stage.

Fill Muffin Cups: Divide the batter evenly among the prepared muffin cups, filling them about 3/4 full.

Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Cool: Once baked, remove the muffins from the oven and let them cool in the pan for about 5 minutes before transferring to a wire rack to cool completely.

Enjoy: Serve warm or at room temperature, and savor the delicious flavors of peanut butter and banana!
