1 cup creamy peanut butter

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1/2 cup packed brown sugar

1 large egg

1 teaspoon vanilla extract

1 1/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup mini marshmallows

1/2 cup semisweet chocolate chips

Extra granulated sugar for rolling

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix Wet Ingredients: In a large mixing bowl, cream together the softened butter, peanut butter, granulated sugar, and brown sugar until the mixture is smooth and fluffy. This should take about 2-3 minutes.

      Add Egg and Vanilla: Beat in the egg and vanilla extract, mixing until fully combined.

        Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, stirring until fully incorporated.

          Fold in Goodies: Gently fold in the mini marshmallows and semisweet chocolate chips until they are evenly distributed throughout the cookie dough.

            Form Cookies: Using a cookie scoop or tablespoon, portion out the dough and roll each portion into a ball. Roll each ball in granulated sugar to give them a nice sweet crust.

              Bake: Place the cookie dough balls onto the prepared baking sheet, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers might look a bit soft; that’s okay, they will set as they cool.

                Cool Down: Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
