Ingredients
  

1 cup all-purpose flour

2 tablespoons granulated sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk (or milk + 1 tablespoon vinegar)

1 large egg

2 tablespoons melted butter (plus extra for cooking)

1 teaspoon vanilla extract

Instructions
 

In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

    In a separate bowl, mix the buttermilk, egg, melted butter, and vanilla extract until fully incorporated.

      Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; some lumps are okay.

        Heat a non-stick skillet or griddle over medium heat and add a small amount of butter to coat the surface.

          Once the skillet is hot, pour 1/4 cup of the batter for each pancake onto the skillet. If you like, you can add chocolate chips or blueberries on top at this point.

            Cook for about 2 minutes or until bubbles form on the surface and the edges start to look set. Flip the pancakes and cook for another 1-2 minutes until golden brown and puffed.

              Remove the pancakes from the skillet and keep warm in a low oven while you repeat with the remaining batter.

                Serve the pancakes warm with your favorite toppings such as syrup, fresh fruit, or whipped cream.
