Ingredients

1 ripe banana, mashed

1 cup cottage cheese

2 large eggs

1/2 cup rolled oats

1/2 teaspoon vanilla extract

1 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon cinnamon (optional)

Cooking oil or butter for frying

Instructions

In a large mixing bowl, combine the mashed banana and cottage cheese until smooth.

Beat in the eggs one at a time, ensuring the mixture is well combined.

In a separate bowl, mix the rolled oats, baking powder, baking soda, salt, and cinnamon.

Gradually fold the dry ingredients into the wet mixture until just combined. Avoid over-mixing; the batter should be slightly lumpy.

Preheat a non-stick skillet or griddle over medium heat and lightly grease with cooking oil or butter.

Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for an additional 2-3 minutes until golden brown.

Keep pancakes warm in a low oven while cooking the remaining batter.

Serve warm, topped with fresh fruit, maple syrup, or a dollop of yogurt.
