Ingredients

1 cup all-purpose flour

2 tablespoons granulated sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk, at room temperature

1 large egg, at room temperature

2 tablespoons unsalted butter, melted + extra for cooking

1 teaspoon vanilla extract

Instructions

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined. This ensures that the leavening agents are evenly distributed.

Combine Wet Ingredients: In another bowl, whisk the buttermilk, egg, melted butter, and vanilla extract until smooth. Make sure the buttermilk is at room temperature to help the pancakes rise better.

Combine Mixtures: Pour the wet mixture into the dry ingredients. Gently fold the two mixtures together with a spatula or wooden spoon until just combined. It's okay if there are a few lumps—do not overmix as this can make the pancakes dense.

Preheat the Griddle: Heat a non-stick griddle or skillet over medium heat. Lightly grease with a pat of butter or a splash of non-stick cooking spray.

Cook the Pancakes: Once the skillet is hot, pour about 1/4 cup of batter for each pancake onto the griddle. Cook for 2-3 minutes or until bubbles form on the surface and the edges appear set. Flip the pancakes and cook for an additional 1-2 minutes until golden brown and cooked through.

Serve Warm: Transfer the pancakes to a warm plate and repeat the process with the remaining batter. Serve immediately topped with maple syrup, fresh fruit, or a sprinkle of powdered sugar as desired.
