¾ cup granulated sugar

2 large eggs

1 cup buttermilk (or 1 cup milk + 1 tablespoon vinegar)

1 ½ cups peeled and diced apples (such as Granny Smith or Honeycrisp)

½ cup brown sugar, packed (for topping)

1 teaspoon ground cinnamon (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it lightly.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, and salt until well combined. Set aside.

      Cream Butter and Sugar: In another bowl, using a hand mixer or stand mixer, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.

        Add Eggs and Vanilla: Beat in the eggs, one at a time, followed by the vanilla extract, mixing until fully incorporated.
