1 cup cottage cheese (large curd)

4 large eggs

1 cup oat flour (or blended oats)

1/2 cup milk (dairy or plant-based)

2 tablespoons honey or maple syrup

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

Pinch of salt

Preheat your waffle iron according to the manufacturer's instructions. For best results, lightly grease it with cooking spray or brush with melted coconut oil.

    In a large mixing bowl, combine the cottage cheese and eggs. Whisk until the mixture is smooth and thoroughly combined.

      Add oat flour, milk, honey (or maple syrup), vanilla extract, baking powder, baking soda, and salt to the bowl. Stir until just combined—be careful not to over-mix to keep the batter light and fluffy.

        Let the batter rest for 5 minutes; this helps the oats absorb moisture and creates a thicker batter.

          Once the waffle iron is hot, pour enough batter into the center to just cover the surface (about 1/2 to 2/3 cup depending on the size of your iron). Close the lid and cook according to the manufacturer's time recommendation, usually around 4-5 minutes or until golden brown.
