1 cup ricotta cheese

3 large eggs

1/2 cup milk

Zest of 1 lemon

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 cup all-purpose flour

2 tablespoons granulated sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

Butter or cooking spray for the pan

Instructions
 

In a large mixing bowl, combine the ricotta cheese, eggs, milk, lemon zest, lemon juice, and vanilla extract. Whisk until smooth and well blended.

    In another bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

      Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.

        Heat a non-stick skillet or griddle over medium heat and add a small amount of butter or cooking spray to coat.

          Pour about 1/4 cup of batter for each pancake onto the skillet. Cook for about 3-4 minutes, or until bubbles form on the surface.

            Carefully flip the pancakes and cook for another 2-3 minutes on the other side, until golden brown and cooked through.

              Continue the process with the remaining batter, adding more butter or spray to the pan as needed.

                Serve the pancakes warm, drizzled with maple syrup, fresh berries, or a dusting of powdered sugar for an extra touch of sweetness.
