4 cups cooked chicken, shredded

2 cups cooked rice (white or brown)

1 can (10.5 oz) cream of mushroom soup

1 cup sour cream

1 cup frozen mixed vegetables (peas, carrots, corn)

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon salt

1 cup crushed buttery crackers (for topping)

2 tablespoons butter, melted

Fresh parsley, for garnish (optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large mixing bowl, combine the shredded chicken, cooked rice, cream of mushroom soup, sour cream, frozen mixed vegetables, 1/2 cup of shredded cheddar cheese, garlic powder, onion powder, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

      Transfer the chicken mixture into a greased 9x13-inch baking dish, spreading it out evenly.

        In a separate bowl, mix the crushed buttery crackers with the melted butter until the crumbs are well-coated.

          Sprinkle the buttery cracker topping evenly over the chicken casserole layer in the baking dish.

            Finish by sprinkling the remaining 1/2 cup of shredded cheddar cheese on top of the cracker layer.

              Bake in the preheated oven for 25-30 minutes, or until the casserole is heated through and the top is golden brown and bubbly.

                Remove from the oven and let it cool slightly before serving. Garnish with chopped fresh parsley if desired.
