1 lb ground beef

1 lb ground pork

2 cups caramelized onions (about 2 large onions)

1 cup breadcrumbs

1/2 cup grated gruyère cheese (plus extra for topping)

1/4 cup fresh parsley, chopped

1 large egg

1 tablespoon Worcestershire sauce

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup beef broth

1/4 cup balsamic vinegar

Fresh thyme leaves for garnish

Caramelize Onions: In a large skillet over medium heat, add a tablespoon of olive oil and sliced onions. Cook, stirring regularly, for about 20-25 minutes until they turn golden and caramelized. Set aside to cool slightly.

    Preheat Oven: Preheat your oven to 350°F (175°C).

      Mix Meatloaf Ingredients: In a large mixing bowl, combine the ground beef, ground pork, caramelized onions, breadcrumbs, grated gruyère cheese, parsley, egg, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Using your hands, mix until just combined.

        Shape the Loaf: Form the meat mixture into a loaf shape and place it in a greased baking dish.

          Prepare the Glaze: In a small bowl, whisk together the beef broth and balsamic vinegar. Pour this mixture over the meatloaf.

            Bake: Place the meatloaf in the preheated oven and bake for about 1 hour, or until the internal temperature reaches 160°F (71°C).

              Add Cheese Topping: Remove the meatloaf from the oven, sprinkle additional gruyère cheese on top, and return to the oven for an additional 10 minutes or until the cheese is melted and bubbly.
