French Onion Potato Bake

4 large russet potatoes, thinly sliced

2 large onions, thinly sliced

2 tablespoons olive oil

2 cups beef or vegetable broth

1 tablespoon balsamic vinegar

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon garlic powder

Salt and pepper, to taste

1 cup shredded Gruyère cheese

½ cup grated Parmesan cheese

Fresh parsley, for garnish

Instructions
 

Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.

    In a large skillet over medium heat, add the olive oil. Once hot, add the sliced onions and sauté for about 15-20 minutes, stirring occasionally, until the onions are caramelized and golden brown.

      Stir in the balsamic vinegar, thyme, garlic powder, salt, and pepper. Cook for an additional 2 minutes and then remove from heat.

        Layer half of the sliced potatoes in the prepared baking dish, slightly overlapping them.

          Pour half of the caramelized onion mixture over the potato layer, then sprinkle with half of the Gruyère cheese.

            Repeat the layers with the remaining potatoes, onions, and Gruyère cheese.

              In a separate bowl, mix the broth with the remaining salt and pepper, then pour it evenly over the layered potatoes and onions in the dish.

                Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 45 minutes.

                  After 45 minutes, remove the foil, sprinkle the grated Parmesan cheese on top, and bake uncovered for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

                    Once done, let it cool for 5-10 minutes. Garnish with fresh parsley before serving.
