1/2 cup packed brown sugar

1/2 cup vegetable oil (or melted coconut oil)

2 large eggs

1 teaspoon vanilla extract

1/2 cup semi-sweet chocolate chips (plus extra for topping)

1/4 cup chopped walnuts or pecans (optional)

Prepare the Zucchini: Begin by washing the zucchini thoroughly. Grate it using a box grater or food processor. Once grated, you may want to squeeze out excess moisture using a clean kitchen towel or cheesecloth. Set aside.

    Mix Dry Ingredients: In a medium bowl, sift together the all-purpose flour, cocoa powder, baking soda, baking powder, salt, and cinnamon. This aerates the flour and helps the dry ingredients combine evenly.

      Combine Wet Ingredients: In a large mixing bowl, whisk together the granulated sugar, brown sugar, and vegetable oil until well blended. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
