Ingredients

2 ripe mangoes, diced

1 small red onion, finely chopped

1 red bell pepper, diced

1 jalapeño pepper, seeded and minced

1/4 cup fresh cilantro, chopped

Juice of 2 limes

Salt to taste

1/2 teaspoon ground cumin (optional)

1/2 avocado, diced (optional)

1/2 teaspoon black pepper (optional)

Instructions

Begin by washing and peeling the mangoes. Carefully remove the pit and dice the pulp into small cubes. Place the diced mango in a medium mixing bowl.

Finely chop the red onion and add it to the bowl with the mango.

Dice the red bell pepper and jalapeño pepper, then mix them into the mango and onion combination. If you prefer a milder salsa, you can adjust the amount of jalapeño to taste.

Add the chopped cilantro to the bowl, which will enhance the fresh flavors.

Squeeze the juice of two limes over the mixture. Lime juice not only adds tanginess but also helps preserve the vibrant colors of the salsa.

Season the salsa with salt, ground cumin, and black pepper, if using. Gently stir everything together until well combined, being careful not to crush the mango.

For an added creaminess, fold in the diced avocado just before serving. This step is optional but brings a delightful richness to the salsa.

Taste and adjust the seasoning as necessary, adding more lime juice, salt, or jalapeño according to your preference.

Allow the salsa to sit for at least 15 minutes to let the flavors meld together before serving. For optimal taste, refrigerate for up to 30 minutes.
