Fresh Raspberry Tiramisu

For the Raspberry Layer:

2 cups fresh raspberries (plus extra for garnish)

1/4 cup granulated sugar

1 tablespoon lemon juice

For the Mascarpone Cream:

1 cup mascarpone cheese

1 cup heavy whipping cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

For the Coffee Mixture:

1 cup strong brewed coffee, cooled

2 tablespoons coffee liqueur (optional)

1 tablespoon cocoa powder (for dusting)

For Assembly:

12-14 ladyfinger cookies

Instructions
 

Prepare the Raspberry Layer:

    - In a small saucepan over medium heat, combine the raspberries, granulated sugar, and lemon juice. Cook for about 5-7 minutes until the mixture becomes a thick sauce. Use a fork to gently mash the raspberries as they cook. Remove from heat and set aside to cool.

      Make the Mascarpone Cream:

        - In a large bowl, combine the mascarpone cheese, heavy whipping cream, powdered sugar, and vanilla extract. Using a hand mixer or stand mixer, whip the mixture on medium speed until soft peaks form, about 3-5 minutes.

          Prepare the Coffee Mixture:

            - In a shallow bowl, mix the brewed coffee with coffee liqueur (if using). Set aside.

              Assemble the Tiramisu:

                - Quickly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not soggy. Arrange a layer of dipped ladyfingers at the bottom of a 9x9 inch dish.

                  - Spread half of the mascarpone cream over the ladyfingers, followed by half of the raspberry sauce.

                    - Repeat the layers with another round of dipped ladyfingers, the remaining mascarpone cream, and top with the remaining raspberry sauce.

                      Chill:

                        - Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for the best flavor and texture.

                          Serve:

                            - Before serving, dust the top with cocoa powder and garnish with fresh raspberries. Slice into squares and serve chilled.
