Ingredients

1 medium head of green cabbage, chopped

6 strips of bacon, chopped

1 large onion, thinly sliced

4 cloves of garlic, minced

1 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

2 tablespoons olive oil

2 tablespoons apple cider vinegar

Chopped fresh parsley, for garnish

Instructions

In a large skillet or frying pan, cook the chopped bacon over medium heat until it becomes crispy, around 5-7 minutes. Remove the bacon and set it aside, leaving the rendered fat in the pan.

Add the sliced onion to the bacon fat in the skillet. Cook, stirring occasionally, until the onions are softened and fragrant, about 4-5 minutes.

Stir in the minced garlic and red pepper flakes (if using) and sauté for an additional 1-2 minutes, until the garlic is fragrant but not burnt.

Add the chopped cabbage to the skillet. Drizzle the olive oil over the cabbage and season with salt and pepper. Toss to combine all ingredients well.

Cook the cabbage on medium heat, stirring occasionally, until it wilts and reaches your desired tenderness, about 10-15 minutes.

Once the cabbage is cooked, return the crispy bacon to the skillet and drizzle with apple cider vinegar. Stir everything together to combine and let it cook for an additional 2-3 minutes to allow the flavors to meld.

Remove from heat, garnish with fresh parsley, and serve warm.
