1 medium head of green cabbage, chopped

6 slices of thick-cut bacon, chopped

1 medium onion, sliced

4 cloves of garlic, minced

2 tablespoons olive oil

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1 teaspoon salt (adjust to taste)

2 tablespoons apple cider vinegar

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Ingredients: Chop the cabbage into bite-sized pieces, slice the onion, and mince the garlic. Set aside.

    Cook the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook until crispy, stirring occasionally, about 5-7 minutes. Use a slotted spoon to remove the bacon and set it aside on a paper towel-lined plate, leaving the bacon fat in the skillet.

      Sauté the Onions: In the same skillet with the bacon fat, add the sliced onion. Sauté over medium heat until the onions become translucent and start to caramelize, about 4-5 minutes.

        Add Garlic and Cabbage: Once the onions are ready, add the minced garlic to the skillet. Stir for about 30 seconds until fragrant. Next, toss in the chopped cabbage and mix well.

          Seasoning: Sprinkle the smoked paprika, black pepper, and salt over the cabbage. Drizzle the olive oil on top, and then stir everything together to combine.

            Cook Until Tender: Continue to sauté the cabbage mixture over medium heat, stirring occasionally, until the cabbage is tender and slightly charred, about 10-12 minutes.

              Finish with Bacon and Vinegar: Return the crispy bacon to the skillet and pour in the apple cider vinegar. Stir to combine and cook for an additional 2 minutes to allow the flavors to meld together.

                Serve: Remove from heat and garnish with fresh chopped parsley. Serve warm as a side dish or a hearty main course!
