4 large ripe red tomatoes

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

2 large eggs

1 cup breadcrumbs (panko for extra crunch)

½ cup grated Parmesan cheese (optional)

Vegetable oil (for frying)

Fresh basil leaves (for garnish)

Lemon wedges (for serving)

Instructions
 

Prepare the Tomatoes: Wash the tomatoes thoroughly and slice them into thick rounds, about ½ inch thick. Pat the slices dry with a paper towel to remove excess moisture.

    Set Up the Breading Station: In a shallow dish, whisk together the flour, garlic powder, paprika, salt, and black pepper. In another dish, beat the eggs until well combined. Place the breadcrumbs and Parmesan cheese (if using) in a third dish.

      Coat the Tomatoes: Take each tomato slice and dip it into the flour mixture, ensuring it’s fully coated. Shake off any excess flour, then dip it into the beaten eggs, allowing any excess to drip off. Finally, coat it in the breadcrumb mixture, pressing lightly to ensure the crumbs adhere well.

        Heat the Oil: In a large skillet or frying pan, pour enough vegetable oil to cover the bottom about 1/2 inch deep. Heat the oil over medium heat until it reaches 350°F (175°C).

          Fry the Tomatoes: Carefully place the coated tomato slices in the hot oil, without overcrowding the pan. Fry them for about 3-4 minutes on each side or until they are golden brown and crispy. Use a slotted spoon to transfer them to a plate lined with paper towels to drain excess oil.

            Serve: Arrange the fried red tomatoes on a serving platter. Garnish with fresh basil leaves and serve with lemon wedges on the side for a zesty kick.
