Ingredients

1 cup all-purpose flour

1/2 cup rolled oats

1/2 cup brown sugar

1/4 cup granulated sugar

2 teaspoons baking powder

1/2 teaspoon salt

1/4 teaspoon baking soda

1 large egg

1/2 cup milk (dairy or plant-based)

1/4 cup unsalted butter, melted (or coconut oil for dairy-free)

1 teaspoon vanilla extract

1 cup fresh or frozen blueberries (if using frozen, do not thaw)

Optional: 1/2 teaspoon cinnamon for added flavor

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a mini muffin pan with paper liners or lightly grease it.

Mix Dry Ingredients: In a large mixing bowl, combine the flour, rolled oats, brown sugar, granulated sugar, baking powder, salt, baking soda, and cinnamon (if using). Stir until well mixed.

Whisk Wet Ingredients: In a separate bowl, whisk together the egg, milk, melted butter, and vanilla extract until fully combined.

Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.

Fold in Blueberries: Gently fold in the blueberries to the batter, ensuring they are evenly distributed throughout.

Scoop Batter: Using a small cookie scoop or spoon, fill each mini muffin cup approximately 2/3 full with the batter.

Bake the Muffin Bites: Place the muffin pan in the preheated oven and bake for 12-15 minutes or until the tops are lightly golden and a toothpick inserted into the center comes out clean.

Cool: Once baked, remove the muffin bites from the oven and let them cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.

Freeze: Once cool, arrange the muffin bites on a baking sheet in a single layer and freeze until solid. Once frozen, transfer them to an airtight container or freezer bag for up to 3 months.

Serve: Enjoy the muffin bites straight from the freezer, or thaw them for a few minutes at room temperature for a quick and delicious snack!
