Frozen Blueberry Waffle Yogurt Stacks

2 cups frozen blueberries

1 tablespoon honey (or maple syrup)

1 teaspoon vanilla extract

1 cup all-purpose flour

1 tablespoon sugar

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

1 large egg

1 cup buttermilk (or milk with 1 tablespoon lemon juice)

2 tablespoons melted butter

1 cup Greek yogurt

Fresh mint leaves for garnish (optional)

Prepare the Blueberry Sauce: In a small saucepan, combine the frozen blueberries, honey, and vanilla extract. Cook over medium heat for about 5-7 minutes, or until the blueberries soften and start to burst. Mix gently and allow it to simmer for another 2-3 minutes. Remove from heat and set aside.

    Make the Waffle Batter: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In another bowl, beat the egg, then add the buttermilk and melted butter, mixing until combined. Pour the wet ingredients into the dry ingredients and stir until just combined (don’t worry if there are lumps).

      Cook the Waffles: Preheat a waffle maker according to manufacturer instructions. Spray lightly with cooking spray if necessary.
