Ingredients

2 cups Greek yogurt (plain or vanilla)

1/2 cup honey or maple syrup (adjust for sweetness)

Zest of 2 large lemons

1/2 cup fresh lemon juice (about 2–3 lemons)

1 teaspoon pure vanilla extract

Pinch of sea salt

Optional toppings: fresh berries, coconut flakes, or crushed nuts

Instructions

Prepare the Pan: Line an 8x8 inch square baking dish with parchment paper, allowing some overhang on the sides for easy removal later.

Mix the Ingredients: In a large mixing bowl, combine the Greek yogurt, honey or maple syrup, lemon zest, fresh lemon juice, vanilla extract, and a pinch of sea salt. Whisk these ingredients until smooth and well-blended.

Pour into the Dish: Pour the yogurt mixture into the prepared baking dish, spreading it evenly with a spatula.

Add Toppings: If desired, sprinkle your chosen toppings (such as fresh berries, coconut flakes, or crushed nuts) over the top for added flavor and texture.

Freeze: Cover the dish with plastic wrap or a lid and place it in the freezer. Allow the yogurt mixture to freeze for at least 4–6 hours, or until completely firm.

Cut into Bars: Once frozen, lift the frozen yogurt out of the dish using the parchment paper overhang. Cut into bars of your desired size using a sharp knife.

Serve: Let the bars sit at room temperature for about 5 minutes before serving for easier handling. Enjoy your delicious frozen lemon yogurt bars with friends and family!
