Ingredients

2 cups fresh or frozen peaches, peeled and diced

1 cup Greek yogurt (vanilla or plain)

1/2 cup coconut or almond milk

1/4 cup honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/2 cup granola (for added crunch)

A pinch of salt

Instructions

Prepare the Peaches: If using fresh peaches, wash, peel, and dice them. If using frozen peaches, allow them to thaw slightly and then chop into smaller pieces.

Make the Peach Mixture: In a medium bowl, combine the diced peaches, honey (or maple syrup), vanilla extract, cinnamon, nutmeg, and a pinch of salt. Mix well to coat the peaches evenly and let sit for about 10 minutes for the flavors to meld.

Blend the Yogurt Base: In a separate bowl, whisk together the Greek yogurt and coconut (or almond) milk until smooth and creamy. Taste and adjust the sweetness if necessary.

Layer the Pops: Take your popsicle molds ready. Start with a layer of the yogurt mixture at the bottom, then add a few spoonfuls of the peach mixture, followed by a sprinkle of granola. Repeat this layering process until the molds are full, finishing with a layer of yogurt on top.

Insert Sticks: If your popsicle molds require sticks, insert them now. Make sure they are centered in the mixture.

Freeze: Place the molds in the freezer for at least 4-6 hours, or until completely frozen.

Unmold and Enjoy: Once frozen, run the molds under warm water for a few seconds to help release the pops. Gently pull them out and serve immediately. Enjoy your refreshing Frozen Peach Cobbler Yogurt Pops!
