Ingredients

2 cups vanilla yogurt (greek or regular)

2 cups fresh or frozen peaches, diced

1/4 cup honey or maple syrup (adjust based on sweetness preference)

1/2 teaspoon vanilla extract

1/2 cup granola (your choice)

1/4 cup sliced almonds or walnuts (optional)

A pinch of salt

Instructions

Prepare the Yogurt Base: In a mixing bowl, combine the vanilla yogurt, honey or maple syrup, vanilla extract, and a pinch of salt. Stir until smooth and well combined.

Add Peaches: Fold in the diced peaches gently into the yogurt mixture. Ensure they are evenly distributed throughout the yogurt.

Line the Baking Sheet: Take a baking sheet (approximately 9x13 inches) and line it with parchment paper, allowing some overhang for easy removal later.

Spread the Mixture: Pour the yogurt-peach mixture onto the lined baking sheet. Use a spatula to spread it evenly to about 1/4 inch thickness.

Top with Granola and Nuts: Sprinkle the granola and sliced almonds or walnuts evenly over the top of the yogurt mixture. Press down slightly to ensure they stick.

Freeze: Place the baking sheet in the freezer and allow the yogurt bark to freeze for about 4-6 hours or until completely solid.

Cut and Serve: Once frozen, lift the bark out of the pan using the parchment paper overhang. Place on a cutting board and cut into pieces or break into irregular shapes, as desired.

Store or Enjoy: Serve immediately or store the pieces in an airtight container in the freezer for up to 2 weeks. Enjoy your refreshing snack!
