2 cups fresh strawberries, hulled and quartered

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 teaspoon lemon juice

2 cups Greek yogurt (plain or vanilla for added sweetness)

1/2 teaspoon vanilla extract

1 cup granola (your choice)

Prepare the Strawberries: In a medium bowl, combine the quartered strawberries, honey, and lemon juice. Stir gently to coat the strawberries and let them sit for about 10-15 minutes to macerate and release their juices.

    Blend the Yogurt Mixture: In another bowl, mix the Greek yogurt with vanilla extract until smooth. If you prefer a sweeter yogurt base, you can add a bit more honey or your choice of sweetener.

      Layer Ingredients in Molds: Start by adding a layer of the yogurt mixture to the bottom of each pop-sicle mold, filling it about a third of the way. Next, spoon in a layer of the macerated strawberries along with a little of their juices.

        Add Granola: Sprinkle a layer of granola over the strawberries, pressing it down slightly. Then, add another layer of yogurt mixture on top, followed by more strawberries and granola. Repeat until the molds are almost full, finishing with a top layer of yogurt.

          Insert Sticks and Freeze: Place the pop-sicle sticks in the center of each mold. Carefully tap the molds on the counter to remove any air bubbles. Cover the molds with the provided lids or plastic wrap, then freeze for at least 4-6 hours or until completely solid.

            Serve: To release the yogurt pops, run warm water over the outer sides of the molds for a few seconds. Gently pull the pops out and enjoy your cool, refreshing Frozen Strawberry Shortcake Yogurt Pops!
