Ingredients

2 ripe bananas

2 cups Greek yogurt (plain or flavored)

1 cup strawberries, hulled and sliced

1 cup pineapple chunks (fresh or canned, drained)

1/2 cup chocolate syrup

1/4 cup crushed nuts (walnuts or almonds)

Whipped cream (optional, for topping)

Maraschino cherries (for garnish)

1/4 teaspoon vanilla extract (optional)

Instructions

Prepare the Bananas: Peel the bananas and slice them into thick rounds (about 1 inch thick). You should get about 8-10 slices from each banana.

Make the Yogurt Mixture: In a mixing bowl, combine the Greek yogurt with vanilla extract (if using) until smooth. You can use flavored yogurt for added sweetness, or a combination of both.

Create the Coin Layers: Lay half of the banana slices on a parchment-lined baking sheet. Spoon a generous dollop of the yogurt mixture on top of each banana slice, spreading it gently to cover most of the fruit.

Add Toppings: On top of the yogurt, distribute the sliced strawberries and pineapple chunks evenly. Drizzle chocolate syrup over the fruit and yogurt.

Finish Layering: Add the remaining banana slices on top of the fruit and yogurt layers, repeating the layering process if desired. Drizzle more yogurt on top of the final layer and garnish with crushed nuts.

Freeze the Coins: Place the baking sheet in the freezer and freeze for about 2-3 hours or until the yogurt is solid.

Serve: Once frozen, remove the coins from the baking sheet. You can store them in a zip-top bag or an airtight container in the freezer for future enjoyment. Serve them as snacks or desserts, topped with whipped cream and a maraschino cherry.
