1 cup granola (store-bought or homemade)

1 cup Greek yogurt (plain or flavored)

2 tablespoons honey or maple syrup

1 teaspoon vanilla extract

1 cup mixed berries (strawberries, blueberries, raspberries)

1/4 cup dark chocolate chips (optional)

Fresh mint leaves (for garnish, optional)

Instructions
 

Prepare the Granola Cups:

    Preheat your oven to 350°F (175°C). Line a muffin tin with silicone or paper liners. In a mixing bowl, combine the granola and honey (or maple syrup). Mix well until the granola is evenly coated.

      Form the Cups:

        Using your fingers or a spoon, press the granola mixture firmly into the liners to form small cups, making sure to leave enough space in the center for the yogurt. Bake in the preheated oven for about 10 minutes, or until golden and crispy. Remove from the oven and let cool completely.

          Make the Yogurt Filling:

            In a separate bowl, mix the Greek yogurt with vanilla extract. For sweetness, you can add a touch more honey or maple syrup if desired. Stir well until smooth and creamy.

              Assemble the Cups:

                Once the granola cups have cooled, spoon the yogurt mixture into each cup, filling them generously. Top with mixed berries and sprinkle dark chocolate chips over the top if using.

                  Freeze the Cups:

                    Carefully place the muffin tin in the freezer and freeze for at least 2-3 hours, or until the yogurt is firm.
