1 cup semi-sweet chocolate chips

1/2 cup unsalted butter

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

1/2 cup all-purpose flour

1/3 cup unsweetened cocoa powder

1/4 tsp baking powder

1/4 tsp salt

1/2 cup walnuts or pecans, chopped (optional)

1/2 cup extra semi-sweet chocolate chips for topping (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a microwave-safe bowl, combine the 1 cup of semi-sweet chocolate chips and 1/2 cup of butter. Microwave in 30-second intervals, stirring after each until melted and smooth.

      In a mixing bowl, whisk together the granulated sugar, eggs, and vanilla extract until well combined and slightly fluffy.

        Slowly pour the melted chocolate and butter mixture into the egg mixture, stirring until completely blended.

          In another bowl, sift together the all-purpose flour, cocoa powder, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.

            If using, fold in the chopped walnuts or pecans for an added crunch.

              Using a spoon, scoop out heaping tablespoons of the dough and drop them onto the prepared baking sheet, spacing them about 2 inches apart.

                If desired, press additional chocolate chips on top of the cookies for a gooey finish.

                  Bake in the preheated oven for 10-12 minutes, or until the edges are set, but the centers still look slightly underbaked. They will continue cooking on the baking sheet once removed from the oven.

                    Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
