1 lb ground beef

1 cup onion, diced

2 cloves garlic, minced

1 packet taco seasoning (about 1 oz)

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 cup diced tomatoes (fresh or canned)

1 cup water

2 cups shredded cheddar cheese

1 cup tortilla chips, crushed (for topping)

Fresh cilantro, chopped (for garnish)

Sour cream (for serving)

Instructions
 

Cook the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, making sure to break it up into small pieces with a spatula (about 5-7 minutes). Drain any excess fat if necessary.

    Add Vegetables: Stir in the diced onion and minced garlic; cook for another 3-4 minutes until the onion becomes translucent.

      Season: Add the taco seasoning to the skillet and mix well. Then, add the black beans, corn, diced tomatoes, and water. Stir everything to combine, bringing the mixture to a boil.

        Simmer: Reduce the heat to low and let it simmer uncovered for about 10 minutes, allowing it to thicken.

          Add Cheese: Once thickened, sprinkle the cheddar cheese evenly over the top of the skillet. Cover with a lid and let it cook for another 2-3 minutes until the cheese is melted and bubbly.
