1 (16 oz) container sour cream

2 cups shredded cheddar cheese (divided)

1/2 cup chopped green onions

1/2 cup melted butter

1 tsp garlic powder

1/2 tsp onion powder

1 cup crushed cornflakes (optional for topping)

Salt and pepper to taste

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C).

Prepare the Casserole Mix: In a large mixing bowl, combine the thawed hash browns, cream of chicken soup, sour cream, 1 1/2 cups of shredded cheddar cheese, chopped green onions, melted butter, garlic powder, onion powder, and a pinch of salt and pepper. Mix well until all ingredients are fully incorporated.

Transfer to Baking Dish: Grease a 9x13 inch baking dish with cooking spray or butter. Pour the hash brown mixture into the prepared baking dish, spreading it evenly.

Add Topping: If you’re using crushed cornflakes, sprinkle them evenly over the top of the casserole for added crunch. Finish by scattering the remaining 1/2 cup of shredded cheddar cheese on top.

Bake: Place the casserole in the preheated oven and bake for 45-60 minutes, or until the top is golden and bubbly.

Serve: Remove from the oven and let it cool for a few minutes before serving. Enjoy your delicious Funeral Potatoes as a comforting side dish alongside your favorite main course!
