8 oz (225g) spaghetti or fettuccine

2 tablespoons unsalted butter

2 tablespoons olive oil

8 oz (225g) cremini or button mushrooms, sliced

4 cloves garlic, minced

1 teaspoon thyme (fresh or dried)

1/2 teaspoon red pepper flakes (adjust to taste)

1 cup vegetable or chicken broth

1/2 cup heavy cream

Salt and pepper to taste

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti or fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set the pasta aside.

    Sauté the Mushrooms: In a large skillet, heat the butter and olive oil over medium heat. Add the sliced mushrooms and sauté them for about 5-7 minutes until they’re golden brown and cooked through. Stir occasionally to ensure even cooking.

      Add Garlic and Seasonings: Once the mushrooms are golden, stir in the minced garlic, thyme, and red pepper flakes. Cook for an additional 1-2 minutes until the garlic is fragrant but not browned.

        Create the Sauce: Pour in the vegetable or chicken broth and bring it to a simmer. Let it cook for about 3-4 minutes to reduce slightly. Then, reduce the heat and add the heavy cream, stirring to combine.

          Combine Pasta and Sauce: Add the drained pasta to the skillet, tossing to coat it well with the mushroom sauce. If the sauce is too thick, add some reserved pasta water, a little at a time, until you reach your desired consistency.

            Finish with Cheese: Stir in the grated Parmesan cheese, adjusting with salt and pepper to taste. Remove from heat.
