To master the art of sautéing garlic butter mushrooms, controlling the temperature and timing is paramount. Start by preheating your skillet over medium-high heat. A hot pan ensures that the mushrooms sear rather than steam, which is crucial for achieving that sought-after golden-brown exterior. If the pan is not hot enough, the mushrooms will release moisture and become soggy instead of caramelized.

Ingredients

1 pound (450g) fresh mushrooms (cremini or button)

4 tablespoons unsalted butter

5 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 tablespoon soy sauce

1 tablespoon fresh parsley, chopped (for garnish)

Salt and pepper to taste

Optional: a squeeze of lemon juice for brightness

Instructions

Clean the Mushrooms: Gently wipe the mushrooms with a damp paper towel to remove any dirt. Avoid rinsing them under water to prevent sogginess. Slice larger mushrooms in half or quarters if desired, leaving smaller ones whole.

Melt the Butter: In a large skillet, melt the unsalted butter over medium heat. Allow it to foam slightly but do not let it brown.

Sauté the Mushrooms: Once the butter is melted, add the mushrooms to the skillet in a single layer. Let them cook undisturbed for about 5-7 minutes, allowing them to develop a nice golden color.

Add Garlic and Thymes: Reduce the heat to medium-low. Add the minced garlic and thyme leaves to the skillet. Stir well and cook for another 2-3 minutes, or until the garlic is fragrant (but not burnt).

Season and Finish: Pour in the soy sauce, and stir to combine. Cook for an additional minute to let the flavors meld. Season with salt and pepper to taste. If desired, add a splash of lemon juice for a touch of acidity.

Serve: Remove from heat and transfer the garlic butter mushrooms to a serving dish. Garnish with freshly chopped parsley for a pop of color.
