Ingredients

1 pound large shrimp, peeled and deveined

4 tablespoons unsalted butter, melted

4 cloves garlic, minced

1 tablespoon fresh lemon juice

1 teaspoon paprika

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons fresh parsley, chopped (for garnish)

Skewers (wooden or metal, soaked in water if wooden)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). If using an outdoor grill, preheat to medium-high heat.

Prepare the Marinade: In a small bowl, combine the melted butter, minced garlic, lemon juice, paprika, oregano, salt, and black pepper. Whisk until well combined.

Marinate the Shrimp: In a large mixing bowl, add the shrimp and pour the garlic butter marinade over them. Toss to coat the shrimp evenly, ensuring they are well-marinated. Let them sit for about 15-20 minutes to absorb the flavors.

Skewer the Shrimp: Thread the marinated shrimp onto skewers, about 4-5 shrimp per skewer, depending on their size. Ensure that the shrimp are packed closely but not overcrowded.

          Roasting/Grilling:

            - If using the oven, place the skewers on a baking sheet lined with foil. Roast in the oven for about 8-10 minutes, or until the shrimp turn pink and opaque.

              - If grilling, place the skewers directly on the grill and cook for about 3-4 minutes per side, also until the shrimp are pink and opaque.

Garnish and Serve: Once cooked, remove the skewers from the oven or grill. Sprinkle with freshly chopped parsley for a burst of color and flavor.

Plate and Enjoy: Serve the garlic butter roasted shrimp skewers hot, perhaps over a bed of rice or alongside a fresh salad for a delightful meal.
